Smoked Salmon – 1000 g, pre-sliced (fixed weight), combi salted
This premium smoked salmon is developed for professional kitchens and B2B customers requiring consistent quality and a refined flavor profile. It is made from fresh (never frozen) Salmo Salar of superior quality, farmed in Norway according to the Norwegian Industry Standard for Fish. Raw material (3–5 kg) is processed within five working days from arrival. The fillets are skinned, belly flaps removed, and practically bone-free.
The salmon is first inject salted (max. 6% drinking water quality), then dry salted for 1–1.5 hours and gently rinsed. It is matured for 12 hours at 0–2°C before being dried and smoked for a total of 7 hours using certified beech wood, followed by chilling for 12 hours at 0°C. This process results in a firm texture, a red-orange color (14+), and a clean, aromatic, well-balanced salty taste with a fresh smoky aroma.
After chilling, the fillets are immediately sliced, placed on boards, and vacuum packed using approved food-grade materials, then packed in neutral cardboard boxes.
Shelf life is 18–24 months from production/freezing date when stored at ≤ −18°C. When stored at 0–5°C, shelf life is 5 days unopened and should be consumed within 48 hours after opening. Do not refreeze after thawing.
Fish is the only declared allergen. Production complies with EU food legislation.
